Valentine's day dessert ideas


Chocolate Dipped Strawberry Cookies

Makes about 4 dozen cookies

1 cup real butter, softened
1/2 cup shortening
2 cups sugar
3 eggs, beaten
2 tsp vanilla extract
3 1/2 cups flour
1 cup cocoa powder
2 tsp baking powder
1/2 tsp salt
powdered sugar for rolling 

In a bowl of a stand mixer, cream together butter, shortening and sugar for 2 minutes on medium speed.  Add in eggs and vanilla extract and mix until well incorporated.  In a separate large bowl, whisk together flour, cocoa powder, baking powder and salt.  *This helps it to combine and get any lumps out of the cocoa.  On medium speed, slowly add the flour mixture to the creamed sugar mixture.  Mix until well combined, but not over mixed.  The dough will be real sticky. 

Place a large piece of plastic wrap on a clean, flat counter surface.  Scoop out dough onto plastic wrap.  Using the plastic, shape the dough into a log form.  Cover completely with plastic wrap and place in the fridge for 6 hours or freezer for 4 hours or overnight. 

Before baking, let the dough thaw for about 30-40 minutes on the counter.  Preheat oven to 400 degrees.  Divide dough in half.  Sprinkle a little powdered sugar on a flat, clean surface and some on a rolling pin.  This will help the dough not stick.  Roll out to about 1/4 inch thickness.  Cut out with cookie cutters.  Place on a ungreased cookie sheet and bake for 7-8 minutes.  Let cool for 5 minutes then transfer to a wire cooling rack to cool completely.          

These chocolate cookies are just delicious on their own.



Cherry Pie Perfect for Valentine’s Day

Ingredients
  1. 3 3/4 Cups All Purpose Flour
  2. 1 1/2 tsp Salt
  3. 1 1/2 tsp Sugar
  4. 1 1/2 Cups (3 sticks) Unsalted Butter
  5. 1/2-3/4 Cup Ice Cold Water

Instructions
  1. Place flour, sugar, and salt in the bowl of a Food Processor. Process unitl combined. Add butter, and process until mixture resembles course meal. (About 10-15 seconds) with the machine running add the ice water in a slow steady stream through the tube just until the dough starts to hold together. Do not process for longer than 30 seconds. Test dough by pinching a small amount, if it is still crumbly add a little bit more water. Turn dough out onto a floured surface and divide into 2 equal parts. Try not to overwork the dough. Place each piece tightly in plastic wrap and flatten into a disc. Refrigerate at least 1 hour before using.


Heart macarons

  • COOKIES
  • 60g egg whites (room temperature)
  • 65g sugar
  • 75g almond powder
  • 55g icing sugar
  • fuschia color gel

  • BUTTERCREAM
  • ¼ recipe Decliciously Simple Vanilla Buttercream
  • ½ tsp cinnamon

Line baking sheet with a silpat mat or parchment. Place the almond powder and icing sugar in a food processor. Process until just beginning to clump. Sift well and discard any bits that won't pass through the sifter. Set aside.
Whip the egg whites until they're the consistency of a loose foam. Continue whipping while slowly adding sugar. Whip to a stiff meringue. Fold the dry mixture into the meringue. Add in color gel at this point Pour the batter into a piping bag.

Pipe the macarons onto your baking sheet. When all your macarons are piped, whack the baking sheet on the counter at least 3 times to get rid of any air bubbles. Let the macarons dry at room temperature until dry to the touch. Approx 1 hour. DO NOT skip this step. While macarons are drying, make the buttercream.

Once dry, bake macarons in a 300°F oven until they stick a little bit to the pans. This can be anywhere from 10-20mins depending on your oven and how crowded the macarons are on the pan. Let cookies cool completely before removing from pans. Pipe buttercream into the center, sandwich the cookies and press together.
